Here’s another somewhat healthy dish, if you ignore the fact that it contains butter. Butter might not be good for your heart but it’s good for your soul. True Story. Sure I could substitute it with Olive oil but wouldn’t be as fun now, would it?
I like my salmon simply rubbed with salt and pepper. Then pair it with a simple sauce complete with lemon. There’s something wonderful about the combination of lemon and salmon. Or lemon and butter. Or lemon with pretty much anything. You can guess by now that I’m just a tad obsessed with lemons. What’s not to love? Packed with health benefits too which is a bonus.
Since we are on the topic of health, thought I’d also mention that Salmon contains Omega 3 which reduces inflammation (Yes, I’m talking about you, Right ankle) and high amount of various other vitamins including Vitamin D (Looking at you again dear ankle).
If not for all those reasons mentioned above, make this just for the sake of your tastebuds. They will thank you.
This recipe is for one. Fear not, because if you are willing to cook this, there won’t be shortage of friends wanting to dine with you. So double it, triple it, or more!
Fresh Salmon fillet, skin on
Half teaspoon sea salt
Generous Sprinkle Black Pepper
Rub the Salmon fillet both side with salt and pepper, drizzle with a little olive oil and set aside until the potato galette is almost ready.
Drizzle Olive Oil in hot pan, pan fry the salmon skin down first for roughly 2 minutes, then turn side for another 2 minutes for medium.
Lemon Mustard Sauce
One clove Garlic, minced
1 tablespoon butter
2 tablespoon English Mustard (the lemon juice will tone down the heat, so don’t worry)
Juice of half a lemon
One teaspoon chopped parsley
Melt butter in a small pan, fry the garlic til fragrant, then add mustard and lemon. Finish with parsley. If it’s too dry, add a little water to dilute.
One medium potato (I used desiree)
1 tablespoon butter
Small amount of Salt
Cut potato into even thin slices (best with a mandolin but I don’t have one), dip each slice in butter and then arrange on the oven tray lined with baking paper, overlapping in a tight circle. Bake in 210 degree Celsius oven for roughly 20 minutes until the edges turn brown.
Buttered Green Beans
Blanch the beans in boiling water for about 2 minutes, drain then toss in a tablespoon of butter (if possible using the left over butter from dipping the potato slices) and some minced garlic.
Time to assemble! Arrange the potato galette on the plate, followed by green beans, place the salmon on top and drizzle the sauce over.
Now you have yourself a restaurant standard dinner! Much more economical and you can even eat this without make up or fuss over what dress to wear. Boyfriend’s Tee would be perfect. 😉

Mmm…look,s good, i love my Fish with a little salt and pepper,i have got to try the Fried Salmon ,i mostly eat Baked salmon,but the Lemon mustard sauce sound’s really good.
