Smashed Avocado and Feta on Toast

Ahh…. I don’t eat avocados enough. It’s mainly because the avocados here are all imported and can get quite expensive. (RM5.99 for one in Village grocer!) But from time to time I do get cravings for this incredibly creamy and delicious fruit. So when the craving strikes I just have to close my eyes and pick one off the shelves. Highly justifiable though, as it’s one of the most nutrient dense fruit around. Some people stay away from avos because of the (slightly) high calories, but being nutrient dense means that you get higher amount of nutrient content per calories. In other words, you get “more bangs for your buck”. I should also mention that it’s full of mono and polyunsaturated fats and that’s definitely good for your heart. Here’s just a summary of its key nutrients:

Smashed avocado and feta on toast seems to be another “Melbourne” habit I’ve brought with me. I’m not sure who came up with this but it’s definitely one of my favourite ways of eating avocados. The first time I’ve ever tried this fabulous brunch item was I believe at Friends of Mine in Richmond. Actually, let me search for a photo…..

Oh My! I really miss this. It was the perfect introduction.

Anyway, I’ve replicated this at home and it’s really very simple, taking no more than 15 mins to assemble. Admittedly, seeing I baked my own bread, it did take me a whole day. More satisfying that way though. Nothing more satisfying than the aroma of bread baking. Well, I digress. Back to the avo!

Smashed Avo and Feta on Toast with Mushrooms

1 Avocado
2 tablespoon lemon, juiced
1/4 tsp ground cumin
Pinch salt & pepper
2 slices bread, toasted
1/4 cup good Feta Cheese, crumbed
Sauteed Mushrooms
Some chopped parsley for garnish

Remove the pit from the avocado and scoop out the flesh into a small bowl. Mash it slightly with a fork. Add lemon juice, cumin, salt and pepper and mix.

Meanwhile, sauteed mushrooms in butter or olive oil and season with salt and pepper. Toast the bread.

To serve, serve the smashed avocado on toast, top with the crumbed feta, and mushrooms on the side.

The lemon zing from the avocado kept it light and interesting, while the feta cheese provides the richness while not overwhelming, it’s a perfect brunch dish when you don’t feel like the usual eggs and bacon (or just trying to watch your diet).

    I absolutely love avocadoes. The rich creamy nutty taste. I normally toss it into most of my salads and side dishes but I do avoid them at dinner despite the good fats:P
